Rib Judging Sheet Each Participant must use pork ribs; you can use whatever style of pork ribs that you wish. The method is also left up to you; however you are strongly encouraged to cook/smoke your ribs on site. Sauce is not required. Each participant must have some samples available for the general public along with 3 sample plates for the official judges. The criteria for the official judging is below. There will also be a peoples choice award voted on by the general public. The official judging will begin at 12:30 p.m. each participant will be asked to submit their entry in 5 minute increments. The schedule of judging is also attached.
The Ribs will be judged on the following criteria:
AROMA - Does it smell appealing; like good barbecue? Good smoke aroma.
APPEARANCE Do the ribs look inviting? Colors pleasing?
TEXTURE The meat should be melt in your mouth tender. NOT falling apart done (not looking for pot roast); moist not dried out
TASTE Look for a pleasing balance of meat, spice & smoke. Do NOT penalize a sample because it doesnt taste like your personal favorite. Ask Does it taste good like good barbecue? We are judging the meat above the sauce. ALSO dont score solely on taste.
OVERALL Balance the previous four criteria and give the sample a score based on the overall impression of the entry that you made.

1 to 4 not very good to its ok 5 to 7 average to slightly above average 8 to 9 Outstanding! 10 PERFECT
